Winemaking & Maturation
The fruit comes from single block seven year old vines planted in rich well-drained Swartland/Glenrosa soil types on Far Horizons Wine Estate in Paarl about 50km north of Cape Town. The eight-hectare, trellised and drip-irrigated vineyard is on a cool, southeast-facing slope of the Voor-Paardeberg mountain, a demarcated ward within the Paarl region. The wine underwent malolactic fermentation on the wood, was thereafter racked and then left for 12 months.
Tasting Note
Elegant and serious expression of this unique South African varietal. Remarkable subtle tannins with shimmering dark fruit and blackberry/mulberry bouquet. Twelve months in French & American (15%) oak.
Food Recommendations
Guinea Fowl casserole with garlic mash or Oxtail Potjie! Have a glass with a generous wedge of Gorgonzola cheese and homegrown figs and watch the sun go down.
