Winemaking & Maturation
Fourteen months of ageing in new American oak (Quercus Alba) from the Northern Appalachian mountains in U.S.A.. The barriques are medium toasted, with a 225 litres capacity. The oak was previously dried for two years before being used. Apart from the ageing in oak, the wine is aged in bottle in our cellars for, at least, two years. Alcoholic fermentation took place in small stainless steel vats for 18-20 days, with frequent remontages in order to develop further the colour and the fruit, aiming at the right balance among the fruit and tannic side of the extract.
Tasting Note
Dark red colour, aromatic, velvety and round, it fills the palate with long lasting sensations. The wine shows a wide range of fruity aromas wrapped by the smoky nuances and the vanilla hints from the new American oak. The pleasant and smooth tannins from the Tempranillo and its well achieved balance assure this wine an excellent evolution
Food Recommendations
Serving Temperature: 16-18ºC. Ideal with game, confit de canard, red grilled or barbecued meat, veal or roasted ham.
